Oven Baked Citrus Salmon with Mushrooms

Fresh Salmon Fillet

1 Orange

1/2 Lime

Salt & Pepper


Herb Butter

Salted Butter - Room Temperature

Finely diced parsely and cilantro

Mashed & Minced Garlic (premined is fine)



1. Preheat oven to 450 degrees

2. Mix herb, butter and garlic together. Wrap in plastic wrap or wax paper and refrigerature again for a few minutes.

3. Season salmon with salt and pepper to taste.

4. Slice oranges and sqeeze juice over salmon. Layer the same orange rings to the bottom of the pan. Squeeze lime juice over salmon.

5. Slice mushrooms and add to pan. (The mushrooms will absorb the liquid from the salmon, butter and the excess citrus juices.)

6. Layer the salmon onto the orange slices.

7. Slice herb butter, and add 3-4 butter slices on top of the salmon.

8. Bake times will depend on the size of the salmon, but it should take somewhere between 15-25 minutes to bake.
